  • Samp is hulled yellow corn that has the outer layer removed. Widely used in Southern American & African cooking as a side dish or as a breakfast food or cooked with dried beans & meat. One of the most popular dishes that hominy corn is used in is Cachupa or Munchupa, which is a rich stew of samp, beans, seasoned meats and vegetables.
  • Samp should be rinsed and drained before covering with cold water and soaking overnight. Then you can bring the water and salt to a boil in a medium pot, add samp and stir with a fork. Bring samp to a boil and cover with a lid.  Add samp and stir with a fork. Bring to a boil and cover with a lid. Turn down heat and simmer for about 90 minutes or until cooked, stirring occasionally.
    Fluff with fork before serving.
